Meal Planning And Soup Making
It just so happens that I’m checking my pantry and freezer while making a grocery list today. I’ve found quite a few great meals, including a yummy soup for today.This is yet another proclamation for my love of soup on wintery days. Today, Boulder is expecting 10inches of snow and I find myself lucky enough to have the day off. That means I can look out the window and exclaim, “oh how pretty the snow is,” without having to deal with driving in it. It also means I’m craving a warm bowl of homemade soupy goodness.
Our Weekly Meal Plan
I’m continuing with my plan of designing our weekly meal plan based upon what’s in my pantry/freezer and what’s currently on sale. This has been great for reducing our grocery bill and using up things. The amount left over in our food budget at the end of the month will be put toward paying down debt. That’s right, every penny saved in other categories will go toward debt in an effort to reach our 2017 goals. I’ve really been enjoying the challenge of putting together healthy, tasty meals this way. Here’s this weeks plan:
- White bean and kale soup with homemade bread
- Spinach Quiche and vegetable soup
- Spaghetti, garden salad, and leftover homemade bread
- Enchilada soup and veggie quesadillas
- Chicken and dumplings with green beans
- Pizza and pasta salad
- Indian Dahl soup and homemade naan
- Mediterranean chicken kabobs, cucumber salad, hummus and pita
Not too shabby ehh? Since my hubby has recently been diagnosed with high cholesterol, I’ve been trying to cook more lean proteins and vegetarian meals. This is not only healthy, but great for the budget too! It’s also helpful to plan things that warm up well so they can be taken as lunches. You save a ton of money by not eating out.
Having a well stocked pantry/freezer really helps with dialing back the grocery budget. I keep a variety of beans and rice on hand. These come in handy when making soups and stews, which are crazy cheap!
Update: I spent $201.37 in total. I feel pretty good about this, even though I went over my weekly budget by $1.37 (gasp). What I bought will feed all 5 of us for all meals this week. That works out to about $1.90 a meal per person.
